Loblolly, an exclusive private club located in Hobe Sound, FL is seeking a Director of Dining.
As the Director of Dining, you will be responsible for overseeing all aspects of our dining operations, ensuring the highest standards of service, quality, and hospitality are consistently delivered across multiple outlets.
Reporting directly to the General Manager, you will work closely with the Executive Chef and other department heads to create memorable dining experiences that exceed our members' expectations.
This role requires strong leadership, financial acumen, and a passion for providing unparalleled hospitality.
*Key Responsibilities:*

* ***Financial Oversight:*
* Develop and manage annual budgets for all dining outlets, ensuring financial targets are met or exceeded.
* Monitor financial performance through regular analysis of revenue, expenses, and profit margins.
* Implement cost-control measures and revenue enhancement strategies without sacrificing quality.
* Prepare financial reports and presentations for the Executive Team and board meetings.

* ***Staff Management and Training:*
* Recruit, hire, train, and mentor a team of skilled professionals across various dining outlets, including servers, bartenders, hosts/hostesses, and support staff.
* Establish and enforce standard operating procedures (SOPs) for service, sanitation, and safety protocols.
* Conduct regular performance evaluations, provide constructive feedback, and facilitate ongoing training and development programs to enhance staff skills and knowledge.
* Foster a positive work environment that promotes teamwork, creativity, and a commitment to excellence.

* ***Exceptional Service Delivery:*
* Set and maintain high standards for service excellence, ensuring that all interactions with members and guests reflect the club's commitment to hospitality.
* Oversee the implementation of service standards, including tableside manner, menu knowledge, and attention to detail.
* Address member feedback and concerns promptly and effectively, striving to exceed expectations and resolve issues with professionalism and grace.
* Lead by example, modeling exceptional service behaviors and instilling a culture of hospitality throughout the dining team.

* ***Collaboration with Executive Chef and Department Heads:*
* Work closely with the Executive Chef to develop innovative menus, culinary concepts, and dining experiences that showcase seasonal ingredients and culinary trends.
* Collaborate with the Director of Catering and Special Events, and other department heads to coordinate seamless dining experiences that complement club events and member preferences.
* Participate in regular meetings and planning sessions to align dining initiatives with overall club objectives and strategic goals.

* ***General Management:*
* The Director of Dining will ensure that Club Essentials is properly updated and will have proficiency with the software, along with MS Office Suite.
* Strong leadership abilities with a focus on team development, coaching, and motivation.
* Will use extensive food & beverage knowledge to do menu planning, wine service, and remain on top of culinary trends.
*Qualifications:*
* 5 + years of food and beverage management in a high end club or hotel.
* An Bachelors Degree in Hospitality or equivalent preferred
* Experience in successfully developing and leading a team.
